What are some reasons that evolution may have converged on predators using toxins that focus on the blood, brains, and membranes of prey, as opposed to other organ systems?
One reason as to why venoms attack these could be that attacking these would have the quickest effect. In other words attacking these would be the most effective for a rapid kill.
